
Red wine glazed lamb shanks
Ingredients:
- 2 Lamb shanks (substitute any slow cooking cut you like)
- 1 cup red wine
- 1/2 cup plain flour
- 1 can crushed tomatoes
- 2 tablespoons brown sugar
- 1 onion diced
- 3 celery shoots finely diced
- 1 carrot halved and sliced
- 4 potatoes quartered
- 1 tablespoon Centuries Ahead Rosemary
- 2 teaspoons Centuries Ahead Sage
- 1 teaspoon Centuries Ahead Thyme
- 1 teaspoon Centuries Ahead Black Pepper Cracked
- 1 teaspoon Centuries Ahead Himalayan Pink Salt “fine grind”
Coat Lamb shanks in plain flour and brown off in a heavy base saucepan. Add red wine, crushed tomatoes, sugar, onion, celery, carrot, herbs and spices to the lamb and mix well. Cover and bring to a slow simmer then Cook on in oven at 140 degrees C. Add potatoes after 1 hour and cook on for around 1 more hour or until lamb comes from the bone easily.
